Lightly grease each cavity of a muffin tin to prevent sticking
Place one slice of ham into each muffin cup, pressing gently to form a cup shape
Sprinkle a small amount of shredded cheese into each ham cup
Carefully crack one egg into each cup over the cheese
Season each with salt and black pepper
Bake in the oven until egg whites are set and yolks reach desired doneness
Remove from oven and let cool slightly before taking out
Garnish with chopped green onions for added flavor
