Ingredients
  

  • 12 slices deli ham medium thickness, enough to line muffin cups
  • 12 large eggs
  • ½ cup shredded mozzarella or cheddar cheese
  • ¼ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped green onions optional, for garnish
  • Cooking spray for greasing muffin tin

Method
 

  1. Preheat oven to 375°F (190°C) for even baking
  2. Lightly grease each cavity of a muffin tin to prevent sticking
  3. Place one slice of ham into each muffin cup, pressing gently to form a cup shape
  4. Sprinkle a small amount of shredded cheese into each ham cup
  5. Carefully crack one egg into each cup over the cheese
  6. Season each with salt and black pepper
  7. Bake in the oven until egg whites are set and yolks reach desired doneness
  8. Remove from oven and let cool slightly before taking out
  9. Garnish with chopped green onions for added flavor
  10. Serve warm or store for later
