Ingredients
  

For the Chicken Souvlaki
  • 2 pounds boneless skinless chicken thighs, cut into chunks
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 3 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped
For the Whipped Feta Dip
  • 1 cup feta cheese crumbled
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 1 tablespoon fresh dill chopped
For the Grazing Board
  • 4 pieces warm pita bread or flatbread
  • 1 cup cherry tomatoes
  • 1 cup sliced cucumber
  • 1/2 cup Kalamata olives
  • 1/4 cup fresh parsley for garnish
  • Lemon wedges for serving

Method
 

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper
  2. Add chicken pieces and toss to coat evenly
  3. Cover and refrigerate to marinate for at least 1 hour
  4. Thread marinated chicken onto skewers
  5. Preheat grill or grill pan to medium-high heat
  6. Grill chicken skewers until cooked through and slightly charred
  7. Remove from heat and sprinkle with fresh parsley
  8. In a food processor, blend feta, Greek yogurt, olive oil, lemon juice, garlic, and dill until smooth
  9. Transfer dip to a serving bowl
  10. Arrange grilled chicken, warm pita, vegetables, olives, and feta dip on a large serving board
  11. Garnish with parsley and lemon wedges
