Ingredients
  

  • 1 lb 450 g ground chicken – lean and high in protein
  • 1 cup 120 g zucchini – finely grated and squeezed dry
  • ½ cup 50 g shredded mozzarella cheese – adds creaminess
  • ¼ cup 25 g grated Parmesan cheese – enhances flavor
  • ½ cup 50 g breadcrumbs – helps bind and add texture
  • 1 egg – binds the mixture together
  • 2 cloves garlic – minced for aroma
  • 2 tbsp fresh parsley – chopped for freshness
  • ½ tsp salt – adjust to taste
  • ½ tsp black pepper – for seasoning
  • ½ tsp paprika – adds mild smoky flavor
  • 1 tbsp olive oil – for brushing or greasing
For dipping sauce (optional)
  • ½ cup 120 ml mayonnaise or Greek yogurt – creamy base
  • 1 tbsp chopped herbs parsley or cilantro – for freshness
  • 1 tsp lemon juice – adds brightness
  • 1 clove garlic – finely minced

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
  2. Grate zucchini and squeeze out excess moisture using a towel
  3. In a large bowl, combine ground chicken, zucchini, cheese, breadcrumbs, egg, garlic, parsley, and seasonings
  4. Mix gently until all ingredients are well combined
  5. Scoop small portions and shape into bite-sized balls or patties
  6. Place poppers evenly on the baking sheet
  7. Lightly brush or spray with olive oil for a golden finish
  8. Bake for 18–22 minutes until fully cooked and golden brown
  9. Optionally broil for 2–3 minutes for extra crispiness
  10. Prepare dipping sauce by mixing all sauce ingredients until smooth
  11. Serve warm with dipping sauce
