Preheat oven to 350°F (175°C)
Line a baking sheet with parchment paper
In a large bowl mix almond flour, sweetener, baking soda, and salt
In another bowl whisk melted butter, egg, and vanilla extract
Add the wet mixture to the dry ingredients and mix until a dough forms
Stir in sugar-free chocolate chips
Chill dough briefly if it feels too soft
Scoop large portions of dough and shape into giant cookie rounds
Place cookies on the prepared baking sheet with space between them
Bake until edges are lightly golden
Remove from oven and allow cookies to cool completely
Sprinkle with a little flaky sea salt if desired
