Ingredients
  

  • 2 cups almond flour
  • 1/2 cup keto-friendly sweetener erythritol or monk fruit blend
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup sugar-free chocolate chips
  • 1 tablespoon coconut flour optional for thicker cookies

Method
 

  1. Preheat oven to 350°F (175°C)
  2. Line a baking sheet with parchment paper
  3. In a large bowl mix almond flour, sweetener, baking soda, and salt
  4. In another bowl whisk melted butter, egg, and vanilla extract
  5. Add the wet mixture to the dry ingredients and mix until a dough forms
  6. Stir in sugar-free chocolate chips
  7. Chill dough briefly if it feels too soft
  8. Scoop large portions of dough and shape into giant cookie rounds
  9. Place cookies on the prepared baking sheet with space between them
  10. Bake until edges are lightly golden
  11. Remove from oven and allow cookies to cool completely
  12. Sprinkle with a little flaky sea salt if desired
