- Preheat oven to 400°F (200°C), slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast until cloves are soft.
- Once roasted, allow garlic to cool slightly, then squeeze cloves into a small bowl and mash into a paste.
- In a mixing bowl combine ricotta, cream cheese, Parmesan, heavy cream, and mashed roasted garlic until smooth and well blended.
- Roll out pizza dough on a floured surface to your desired size and transfer to a pizza stone or baking sheet.
- Spread the creamy roasted garlic mixture evenly over the dough as the base sauce.
- Scatter chopped spinach over the sauce, followed by crumbled feta and shredded mozzarella cheese.
- Sprinkle dried oregano and red pepper flakes over the toppings, and season with salt and pepper to taste.
- Drizzle a little olive oil over the pizza to help the toppings brown and add extra flavor.
- Bake in the preheated oven until the crust turns golden and cheese is bubbly and lightly toasted, about 12–15 minutes.
- Let the pizza cool for a couple of minutes, garnish with fresh herbs if desired, and slice before serving.
