Garlic Spinach White Pizza with Creamy Sauce

Ingredients
  

  • 1 lb pizza dough store-bought or homemade
  • 1 head garlic
  • 2 tbsp olive oil
  • ½ cup ricotta cheese
  • ½ cup cream cheese
  • ¼ cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 cups fresh spinach chopped
  • ½ cup crumbled feta cheese
  • ½ cup shredded mozzarella cheese
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes optional
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C), slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast until cloves are soft.
  2. Once roasted, allow garlic to cool slightly, then squeeze cloves into a small bowl and mash into a paste.
  3. In a mixing bowl combine ricotta, cream cheese, Parmesan, heavy cream, and mashed roasted garlic until smooth and well blended.
  4. Roll out pizza dough on a floured surface to your desired size and transfer to a pizza stone or baking sheet.
  5. Spread the creamy roasted garlic mixture evenly over the dough as the base sauce.
  6. Scatter chopped spinach over the sauce, followed by crumbled feta and shredded mozzarella cheese.
  7. Sprinkle dried oregano and red pepper flakes over the toppings, and season with salt and pepper to taste.
  8. Drizzle a little olive oil over the pizza to help the toppings brown and add extra flavor.
  9. Bake in the preheated oven until the crust turns golden and cheese is bubbly and lightly toasted, about 12–15 minutes.
  10. Let the pizza cool for a couple of minutes, garnish with fresh herbs if desired, and slice before serving.
