Line a baking tray with parchment paper.
Peel the bananas and slice them in half lengthwise.
Arrange the banana pieces flat side up on the tray.
Spread a spoonful of peanut butter over each banana piece.
Sprinkle chopped peanuts evenly on top.
In a microwave-safe bowl, melt the chocolate chips with coconut oil until smooth.
Drizzle melted chocolate over the banana pieces.
Sprinkle lightly with sea salt if desired.
Place the tray in the freezer and freeze for 1–2 hours until firm.
Once frozen, remove from the tray and serve or store.
