Ingredients
  

  • Green cabbage – 6 cups finely shredded
  • Purple cabbage – 2 cups finely shredded
  • Green onions – ½ cup sliced
  • Tomatoes – 1 cup diced
  • Shredded cheddar cheese – 1 cup
  • Fritos corn chips – 2 cups lightly crushed
  • For the Dressing
  • Mayonnaise – ½ cup
  • Sour cream – ¼ cup
  • Sugar – 1 tablespoon
  • Apple cider vinegar – 1 tablespoon
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon

Method
 

  1. Add the green cabbage and purple cabbage to a large mixing bowl.
  2. Stir in the sliced green onions and diced tomatoes.
  3. Add the shredded cheddar cheese and gently toss to combine.
  4. In a separate small bowl, whisk together mayonnaise, sour cream, sugar, apple cider vinegar, salt, and black pepper until smooth.
  5. Pour the dressing over the cabbage mixture and toss until evenly coated.
  6. Just before serving, fold in the crushed Fritos for maximum crunch.
  7. Serve immediately.
