Ingredients
  

  • 2 medium cucumbers thinly sliced
  • 300 g cherry or grape tomatoes halved
  • 250 g fresh mozzarella balls bocconcini or ciliegine, halved
  • 15 g fresh basil leaves torn
  • 30 ml extra virgin olive oil
  • 15 ml balsamic vinegar
  • 1 clove garlic minced
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Optional: pinch of red pepper flakes

Method
 

  1. Place the thinly sliced cucumbers in a large salad bowl
  2. Add the halved cherry or grape tomatoes to the bowl
  3. Add the halved fresh mozzarella balls (bocconcini or ciliegine)
  4. Tear fresh basil leaves and scatter them over the vegetables and cheese
  5. In a small bowl, whisk together extra virgin olive oil, balsamic vinegar, minced garlic, sea salt, black pepper, and optional red pepper flakes
  6. Pour the dressing evenly over the cucumber, tomatoes, and mozzarella
  7. Gently toss the salad with salad spoons or tongs to combine all ingredients and coat them in the dressing
  8. Serve immediately or chill briefly for enhanced flavor
