Ingredients
  

  • Fresh avocado – 2 medium diced
  • Corn kernels – 2 cups fresh, grilled, or thawed frozen
  • Cherry tomatoes – 1 cup halved
  • Red onion – ¼ cup thinly sliced
  • Fresh cilantro – ¼ cup chopped
  • Lime juice – 2 tablespoons
  • Olive oil – 2 tablespoons
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon

Method
 

  1. Place the diced avocado, corn kernels, halved cherry tomatoes, and sliced red onion in a large mixing bowl.
  2. Add the chopped fresh cilantro to the bowl.
  3. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper to make the dressing.
  4. Pour the dressing over the salad ingredients.
  5. Gently toss the salad until everything is evenly coated.
  6. Taste and adjust seasoning if needed.
  7. Serve immediately or chill briefly before serving.
