Scoop small mounds of the cheese mixture onto the prepared baking sheet
Gently flatten each mound slightly to help create even, round chips
Sprinkle everything bagel seasoning evenly over each cheese mound
Bake until the edges are golden brown and the centers are bubbly
Remove from oven and allow chips to cool completely on the baking sheet
Let them firm up as they cool to achieve maximum crispiness
Carefully transfer to a serving plate once fully cooled
