Easy Slow Cooker Beef with Broccoli

Ingredients
  

  • pounds flank steak or sirloin thinly sliced against the grain
  • 4 cups broccoli florets
  • 1 cup beef broth
  • ½ cup soy sauce
  • cup brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Place the sliced beef into the slow cooker, spreading it evenly.
  2. In a bowl, whisk together beef broth, soy sauce, brown sugar, sesame oil, garlic, and ginger.
  3. Pour the sauce mixture over the beef, making sure all pieces are coated.
  4. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the beef is tender.
  5. In a small bowl, mix cornstarch with water to create a slurry.
  6. Stir the slurry into the slow cooker to thicken the sauce.
  7. Add the broccoli florets and gently stir.
  8. Cover and cook for an additional 20–30 minutes until the broccoli is tender but still bright green.
  9. Taste and adjust seasoning with salt and black pepper if needed.
  10. Serve warm.
