Easy Mediterranean Feta Potato Bake

Ingredients
  

  • 2 lbs baby potatoes or Yukon gold potatoes halved
  • 7 oz block feta cheese
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon red pepper flakes optional
  • 1 tablespoon fresh lemon juice optional
  • Fresh parsley or basil chopped (for garnish)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Add potatoes to a mixing bowl and toss with olive oil, garlic, oregano, paprika, salt, and pepper.
  3. Spread the seasoned potatoes evenly in a baking dish.
  4. Place the block of feta cheese in the center of the potatoes.
  5. Drizzle a little olive oil over the feta and sprinkle red pepper flakes if using.
  6. Bake uncovered for 40–45 minutes until potatoes are golden and fork-tender.
  7. Gently mash the baked feta and toss it with the potatoes.
  8. Finish with lemon juice and fresh herbs before serving.
