Preheat oven to 400°F (200°C).
Add potatoes to a mixing bowl and toss with olive oil, garlic, oregano, paprika, salt, and pepper.
Spread the seasoned potatoes evenly in a baking dish.
Place the block of feta cheese in the center of the potatoes.
Drizzle a little olive oil over the feta and sprinkle red pepper flakes if using.
Bake uncovered for 40–45 minutes until potatoes are golden and fork-tender.
Gently mash the baked feta and toss it with the potatoes.
Finish with lemon juice and fresh herbs before serving.
