Preheat oven to 400°F (200°C)
Melt mozzarella cheese in a microwave or pan until smooth
Stir in sour cream until well combined
Add egg, almond flour, coconut flour, and chives
Mix into a soft dough
Chill dough for 10–15 minutes for easier handling
Place dough between two sheets of parchment paper
Roll out very thin for crispier crackers
Remove top parchment and cut into squares or shapes
Transfer to baking tray
Brush with melted butter and sprinkle salt
Bake for 8–10 minutes until golden and crispy
Cool completely before serving
