Ingredients
  

  • 3 –4 cups cooked chicken shredded or diced
  • Broccoli florets
  • Cauliflower florets
  • Fresh spinach wilted and squeezed dry
  • Sliced mushrooms
  • Bell peppers green, yellow, or red
  • Diced zucchini
  • Full-fat cream cheese
  • Heavy cream
  • Sour cream
  • Chicken or vegetable broth optional
  • Dijon mustard optional
  • Shredded cheddar cheese
  • Mozzarella cheese optional
  • Parmesan cheese optional
  • Garlic powder
  • Onion powder
  • Dried Italian herbs
  • Salt
  • Black pepper
  • Red pepper flakes optional
  • Smoked paprika optional

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Lightly grease a casserole dish
  3. In a large bowl combine shredded chicken, broccoli, cauliflower, spinach, mushrooms, bell peppers, and zucchini
  4. In a separate bowl mix cream cheese, heavy cream, and sour cream until smooth
  5. Add chicken broth if you prefer a slightly thinner sauce
  6. Stir in Dijon mustard if using
  7. Season with garlic powder, onion powder, Italian herbs, salt, black pepper, and smoked paprika
  8. Pour the creamy sauce over the chicken and vegetables
  9. Mix until everything is evenly coated
  10. Transfer the mixture into the prepared casserole dish
  11. Sprinkle cheddar cheese, mozzarella, and parmesan evenly on top
  12. Bake until the casserole is bubbly and the cheese is golden
  13. Let the casserole rest slightly before serving
