Ingredients
  

  • 4 large flour tortillas or spinach wraps 8–10 inches each
  • 1 cup cottage cheese small curd preferred for creamy texture
  • 1 medium cucumber thinly sliced or julienned for crunch
  • ¼ cup red bell pepper finely chopped, optional for color and crunch
  • ¼ cup fresh dill or parsley finely chopped for freshness
  • 1 tablespoon lemon juice or white wine vinegar for tangy flavor
  • ½ teaspoon garlic powder or 1 small garlic clove minced, optional
  • ¼ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper freshly ground preferred
  • Optional add-ins: ½ cup baby spinach ¼ cup shredded carrots, 1 sliced avocado

Method
 

  1. In a mixing bowl, combine cottage cheese, lemon juice, garlic powder or minced garlic, chopped herbs, salt, and black pepper
  2. Stir the mixture thoroughly until creamy and well blended
  3. Lay each tortilla flat on a clean surface
  4. Spread an even portion of the cottage cheese mixture across the center of each tortilla
  5. Add a layer of sliced cucumber evenly over the spread
  6. Sprinkle chopped red bell pepper and any optional vegetables like spinach, carrots, or avocado
  7. Fold in the sides of the tortilla gently to hold the filling
  8. Roll tightly from one end to form a wrap, similar to a burrito
  9. Slice diagonally if desired for presentation
  10. Serve immediately or wrap for later use
