Ingredients
  

  • Fresh broccoli florets – 4 cups
  • Honeycrisp apple – 1 large diced
  • Red onion – ¼ cup finely sliced
  • Dried cranberries – ½ cup
  • Toasted sunflower seeds – ½ cup
  • Toasted sliced almonds – ¼ cup
  • Greek yogurt or mayonnaise – ⅓ cup
  • Honey – 2 tablespoons
  • Apple cider vinegar – 1 tablespoon
  • Lemon juice – 1 tablespoon
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon

Method
 

  1. Rinse and pat dry the broccoli florets, and place them in a large mixing bowl.
  2. Core and dice the Honeycrisp apple into bite-sized pieces and add to the bowl.
  3. Thinly slice the red onion and add it to the bowl.
  4. Add the dried cranberries, toasted sunflower seeds, and toasted almonds.
  5. In a small bowl, whisk together the Greek yogurt (or mayonnaise), honey, apple cider vinegar, lemon juice, salt, and black pepper until smooth.
  6. Pour the dressing over the salad ingredients and toss gently until everything is evenly coated.
  7. Taste and adjust seasoning as needed. Chill briefly before serving for best flavor.
