In a bowl, mix almond flour, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.
In a separate bowl, beat the eggs until smooth.
Dip each mozzarella stick into the egg, then coat thoroughly in the almond flour mixture.
Place coated sticks on a tray and freeze for 30 minutes to firm up.
Heat oil in a skillet over medium heat.
Fry mozzarella sticks in small batches for 1–2 minutes per side until golden and crispy.
Remove and drain on paper towels.
Serve immediately while warm and melty.
