Ingredients
  

For the Dough
  • 8 oz Cream Cheese soften before use for easy mixing
  • 1 cup Almond Flour coconut flour can be used as a substitute, but reduce the amount since it's more absorbent.
  • 1/4 cup Coconut Flour best used in combination with almond flour for optimal texture.
  • 1 cup Erythritol other keto sweeteners like stevia or monk fruit work well too.
  • 1 large  Egg binds the mixture together.
  • 1 teaspoon  Vanilla Extract using pure extract is recommended for the best taste.
  • 1 teaspoon  Baking Powder make sure it's evenly mixed to avoid lumps.
  • 1/2 teaspoon  Salt elevates the overall flavor of the roll-ups.
For the Cinnamon Filling
  • 2 teaspoon  Ground Cinnamon consider adding nutmeg for extra depth.
  • Additional Sweetener (optional) a light dusting with powdered erythritol enhances visual appeal and taste.

Method
 

  1. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and a pinch of salt. Stir until the mixture is blended and forms a smooth dough texture.
  2. In a separate bowl, whisk together softened cream cheese, egg, and vanilla extract until creamy and smooth, making sure no lumps remain.
  3. Gradually fold the dry ingredients into the cream cheese mixture. Continue mixing until a cohesive dough forms. If it feels sticky, allow it to rest for a few minutes.
  4. Place the dough between two sheets of parchment paper and roll it gently into a rectangle shape. This ensures even filling distribution later on.
  5. For the cinnamon filling, combine ground cinnamon with a bit of sweetener in a small bowl. Spread this mixture evenly over the surface of the rolled-out dough.
  6. Using the parchment paper to guide you, carefully roll the dough into a tight log. Once rolled, slice it into even pieces to form your roll-ups.
  7. Heat a skillet over medium heat and cook the roll-ups cut-side down for about 3–4 minutes per side until they turn golden brown and crispy.
  8. Allow the roll-ups to cool slightly before serving. Dust them with cinnamon and erythritol for extra sweetness, and for added richness, top with unsweetened whipped cream before enjoying.

Notes

For an extra touch of richness, serve these roll-ups with a spoonful of unsweetened whipped cream on the side.
