Ingredients
  

  • Cauliflower Crust
  • 3 cups riced cauliflower fresh or frozen
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • Buffalo Chicken Topping
  • 1 cup cooked chicken breast shredded
  • 2 –3 tbsp buffalo sauce adjust to taste
  • ½ cup shredded mozzarella cheese
  • 2 tbsp crumbled blue cheese or feta optional
  • 2 tbsp thinly sliced red onion
  • 1 tbsp chopped green onions

Method
 

  1. Preheat oven to moderate baking temperature
  2. Microwave riced cauliflower until softened
  3. Transfer cauliflower to a clean towel
  4. Squeeze firmly to remove excess moisture
  5. Place dried cauliflower in a mixing bowl
  6. Add egg, mozzarella, Parmesan, and seasonings
  7. Mix until a dough-like texture forms
  8. Spread mixture onto parchment-lined pan
  9. Shape into a thin, even pizza round
  10. Bake until crust turns golden and firm
  11. Combine shredded chicken with buffalo sauce
  12. Spread cheese evenly over baked crust
  13. Add buffalo chicken mixture across pizza
  14. Sprinkle additional cheese and onions
  15. Return pizza to oven until cheese melts
  16. Remove and garnish with green onions
  17. Allow pizza to cool slightly before slicing
