Ingredients
  

  • 4 boneless skinless chicken breasts (about 170 g / 6 oz each)
  • 120 g grated Parmesan cheese
  • 90 g Italian-seasoned breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ¾ teaspoon salt
  • 2 large eggs
  • 30 ml milk
  • 45 ml olive oil for baking tray
  • For the Sauce & Topping
  • 240 ml marinara sauce
  • 120 g shredded mozzarella cheese
  • 15 g grated Parmesan cheese extra, for topping
  • 1 tablespoon fresh parsley or basil finely chopped

Method
 

  1. Preheat the oven to 200°C (400°F) and brush a large baking dish with olive oil
  2. Pound the chicken breasts to an even thickness to ensure uniform cooking
  3. In a shallow bowl, combine breadcrumbs, grated Parmesan, garlic powder, onion powder, oregano, basil, paprika, salt, and black pepper
  4. In a separate bowl, whisk together eggs and milk until fully combined
  5. Dip each chicken breast into the egg mixture, allowing excess to drip off
  6. Press the chicken firmly into the Parmesan breadcrumb mixture, coating all sides evenly
  7. Place the coated chicken into the prepared baking dish, leaving space between pieces
  8. Bake uncovered for 22–25 minutes, flipping once halfway through for even crisping
  9. Remove the dish from the oven and spoon marinara sauce evenly over each chicken breast
  10. Sprinkle mozzarella and extra Parmesan cheese on top
  11. Return the dish to the oven and bake for an additional 8–10 minutes, until the cheese is melted and bubbly
  12. Remove from the oven and allow the chicken to rest for 5 minutes before serving
