Ingredients
  

  • cup unsalted pistachios
  • cups unsweetened almond milk or other plant-based milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • ¼ cup chia seeds
  • Optional: ¼ teaspoon cardamom

Method
 

  1. Add pistachios, almond milk, maple syrup, vanilla, and salt to a blender.
  2. Blend until completely smooth and creamy.
  3. Pour the mixture into a bowl or individual jars.
  4. Stir in the chia seeds until evenly combined.
  5. Let sit for 10 minutes, then stir again to prevent clumping.
  6. Cover and refrigerate for at least 4 hours or overnight until thickened.
  7. Stir before serving and adjust sweetness if needed.
