Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/3 cup basil pesto
  • 1/2 cup grated parmesan cheese
  • 1 cup cherry tomatoes
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
Optional garnish
  • Fresh basil leaves
  • Extra parmesan cheese
  • Red pepper flakes

Method
 

  1. Season chicken breasts with salt, pepper, and Italian seasoning
  2. Heat olive oil in a large skillet over medium heat
  3. Sear the chicken until golden brown on both sides
  4. Remove chicken from the pan and set aside
  5. In the same skillet sauté minced garlic until fragrant
  6. Add heavy cream and basil pesto, stirring to combine
  7. Stir in parmesan cheese and allow the sauce to thicken slightly
  8. Add cherry tomatoes and cook until they soften
  9. Return chicken to the skillet and coat with the creamy sauce
  10. Simmer until the chicken is fully cooked and tender
  11. Garnish with fresh basil and extra parmesan before serving
