Ingredients
  

  • 1 package 0.3 oz / 8–9 g sugar-free flavored gelatin
  • 1 cup 240 mL boiling water
  • 1/2 cup 120 mL cold water
  • 1 cup 240 mL heavy whipping cream, cold
  • 2 tablespoons powdered keto-friendly sweetener adjust to taste
  • 1/2 teaspoon vanilla extract optional

Method
 

  1. Dissolve sugar-free gelatin completely in boiling water, stirring until no granules remain
  2. Add cold water to the gelatin mixture and stir to combine
  3. Allow mixture to cool to room temperature without fully setting
  4. In a separate bowl, whip heavy cream until soft peaks form
  5. Add powdered sweetener and vanilla extract while whipping
  6. Continue whipping until cream reaches a fluffy, stable consistency
  7. Slowly pour cooled gelatin mixture into whipped cream
  8. Gently fold until fully incorporated and smooth
  9. Spoon mixture into serving cups or dessert glasses
  10. Refrigerate until fully set and firm
  11. Serve chilled for best texture and flavor
