Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound Italian sausage casings removed
  • 1/2 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 cup dry orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • Extra Parmesan cheese for garnish

Method
 

  1. Heat olive oil in a large skillet or saucepan over medium heat
  2. Add Italian sausage and cook while breaking it apart with a spoon
  3. Cook until sausage is browned and cooked through
  4. Add chopped onion and sauté until softened
  5. Stir in minced garlic and cook until fragrant
  6. Add dry orzo and stir to coat it with the sausage mixture
  7. Pour in chicken broth and bring mixture to a gentle simmer
  8. Cook until orzo becomes tender and most of the liquid is absorbed
  9. Stir in heavy cream and Italian seasoning
  10. Add fresh spinach and cook until wilted
  11. Mix in grated Parmesan cheese until sauce becomes creamy
  12. Taste and adjust salt, pepper, and red pepper flakes if needed
  13. Remove from heat and allow to rest briefly before serving
  14. Garnish with extra Parmesan cheese
