Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat
  • 2 large eggs
  • ½ cup oat flour or chickpea flour
  • ½ teaspoon garlic powder
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • 1 lb chicken breast sliced into strips
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup sliced red onion
  • ¼ cup crumbled feta or cheese optional
  • ½ cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon dried herbs parsley or dill

Method
 

  1. Preheat oven to 350°F (180°C) and line a baking tray with parchment paper
  2. Add cottage cheese, eggs, flour, garlic powder, baking powder, and salt to a blender
  3. Blend until smooth and lump-free batter forms
  4. Pour batter onto tray and spread evenly into a thin layer
  5. Bake for 25–30 minutes until golden and slightly crisp on edges
  6. Remove from oven and allow to cool slightly before cutting into wrap portions
  7. Heat olive oil in a skillet over medium heat
  8. Add chicken strips and season with paprika, cumin, chili powder, garlic powder, salt, and pepper
  9. Cook until chicken is golden and fully cooked through
  10. In a small bowl, mix Greek yogurt, lemon juice, and herbs to create a creamy sauce
  11. Place chicken, lettuce, tomatoes, and onion onto flatbread
  12. Drizzle yogurt sauce over filling
  13. Roll tightly into wraps and slice if desired
