Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease with a little oil or cooking spray.
In a food processor or blender, blend the cottage cheese until completely smooth — this ensures a uniform dough texture.
In a mixing bowl, whisk together the eggs, blended cottage cheese, and olive oil (if using).
Add the oat flour, baking powder, salt, and optional seasoning. Stir until the dough comes together; it should be soft but not sticky — add a touch more flour if needed.
Divide the dough into 2–3 portions depending on how large you want the flatbreads.
On a lightly floured surface (or between two sheets of parchment paper), roll each portion into a thin oval or round flatbread shape.
Transfer the shaped dough to the prepared baking sheet.
Bake for 15–18 minutes, or until the edges are lightly golden.
Remove from the oven and let cool slightly before serving warm
