Preheat oven to 350°F (175°C) and grease or line a loaf pan
Mash ripe bananas in a large bowl until smooth
Add eggs, cottage cheese, maple syrup, oil, and vanilla extract
Mix until well combined and creamy
In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon
Gradually fold dry ingredients into wet mixture until just combined
Fold in chocolate chips or nuts if using
Pour batter into prepared loaf pan and spread evenly
Bake for 50–60 minutes until a toothpick inserted comes out clean
Let cool before slicing for best texture
