Ingredients
  

  • 2 large ripe bananas – mashed about 1 cup / 240 g for natural sweetness
  • 3 large eggs – adds structure and protein
  • ½ cup 120 g cottage cheese – boosts moisture and protein
  • cup 80 ml maple syrup or honey – natural sweetener
  • 1 tsp vanilla extract – enhances flavor
  • 1 ½ cups 190 g all-purpose flour – base of the bread
  • 1 tsp baking soda – helps the bread rise
  • ½ tsp baking powder – adds lightness
  • ½ tsp salt – balances flavors
  • 1 tsp cinnamon – optional for warmth
  • ¼ cup 60 ml oil or melted butter – adds richness
  • ½ cup 90 g chocolate chips or nuts – optional for texture

Method
 

  1. Preheat oven to 350°F (175°C) and grease or line a loaf pan
  2. Mash ripe bananas in a large bowl until smooth
  3. Add eggs, cottage cheese, maple syrup, oil, and vanilla extract
  4. Mix until well combined and creamy
  5. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon
  6. Gradually fold dry ingredients into wet mixture until just combined
  7. Fold in chocolate chips or nuts if using
  8. Pour batter into prepared loaf pan and spread evenly
  9. Bake for 50–60 minutes until a toothpick inserted comes out clean
  10. Let cool before slicing for best texture
