Ingredients
  

  • 240 g long-grain white rice
  • 1 cinnamon stick about 5–7 cm
  • 1.2 L cold water divided
  • 120 ml whole milk or almond milk
  • 90 g granulated sugar adjust to taste
  • 5 ml vanilla extract
  • Optional: ground cinnamon for garnish
  • Optional: ice cubes for serving

Method
 

  1. Rinse the rice under cold water until the water runs clear
  2. In a bowl, combine rinsed rice with cinnamon stick and 480 ml cold water; soak for at least 4 hours or overnight for best flavor
  3. After soaking, transfer rice and cinnamon water (discarding rice if preferred, or blending it) into a blender; blend until rice is broken down and water is milky
  4. Strain the mixture through a fine-mesh sieve or cheesecloth into a large pitcher to remove solids
  5. Add remaining 720 ml cold water, milk, granulated sugar, and vanilla extract to the pitcher; stir until sugar dissolves
  6. Chill the horchata in the refrigerator for at least 1 hour
  7. Serve over ice and sprinkle a touch of ground cinnamon on top if desired
