Trim crusts off each bread slice and use a rolling pin to flatten slightly.
In a shallow bowl, whisk together eggs, milk, 1 teaspoon cinnamon, and sugar until smooth.
Spread your desired filling (cream cheese, jam, etc.) over one side of each flattened bread slice.
Carefully roll each slice up tightly so the filling remains inside.
Heat butter in a non-stick skillet over medium heat until melted.
Dip each roll-up in the cinnamon-egg mixture, coating all sides.
Place roll-ups seam-side down in the skillet and cook until golden brown on all sides, about 2–3 minutes per side.
Transfer to a plate and roll in a mixture of remaining cinnamon and sugar while still warm.
