Ingredients
  

  • 4 Italian sub rolls or hoagie buns
  • 120 g Genoa salami thinly sliced
  • 120 g capicola or ham thinly sliced
  • 120 g provolone cheese sliced
  • 120 g roasted turkey breast sliced
  • 120 g iceberg lettuce shredded
  • 1 large tomato thinly sliced
  • 1 small red onion thinly sliced
  • 60 g pepperoncini or banana peppers sliced
  • 60 g roasted red peppers sliced
  • 60 ml extra virgin olive oil
  • 30 ml red wine vinegar
  • 5 g dried oregano
  • 3 g garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • Optional: fresh basil leaves

Method
 

  1. Slice each sub roll lengthwise without cutting all the way through
  2. In a small bowl, whisk together extra virgin olive oil, red wine vinegar, dried oregano, garlic powder, black pepper, and salt to make the Italian dressing
  3. Layer the bottom of each roll with Genoa salami, capicola (or ham), provolone cheese, and turkey breast
  4. Add shredded lettuce, tomato slices, red onion, pepperoncini, and roasted red peppers over the meats and cheese
  5. Drizzle the prepared Italian dressing generously over the sandwich fillings
  6. If using, add fresh basil leaves for extra herbaceous brightness
  7. Close the sandwiches gently, press slightly, and serve immediately
