Method
- In a medium mixing bowl, add the banana and mash it well using a fork or potato masher until smooth.
- Add Greek yogurt, vanilla extract, peanut butter, and chopped peanuts to the bowl. Mix everything together to combine into a smooth, creamy filling.
- In a small bowl, add chocolate chips and coconut oil. Microwave in 30-second increments, stirring between each round until the chocolate is melted and smooth. (You can also use a double boiler if you prefer.)
- Pour about 1 teaspoon of melted chocolate into each silicone ice cube tray cavity. Use a spoon to gently press the chocolate along the walls of the tray until fully covered, then place it in the freezer for about 5 minutes to set.
- Once the chocolate has hardened, fill each mould with the peanut butter yogurt filling (around 2 tablespoons, depending on the size of your tray). Drizzle a thin layer of melted chocolate on top, then spread smooth with a spoon while it’s still fluid, not thick.
- Freeze for about 2 hours until firm. Store in the freezer, and when ready to serve, enjoy straight from the freezer or let them thaw 2–5 minutes on the counter before eating.
Notes
Depending on the size of your ice cube tray, you may have more or less frozen yogurt bites.
The type of Greek yogurt will effect how creamy these yogurt bites are. A higher fat yogurt, such as 5%, will result in a less icy consistency.
