Ingredients
  

  • 2 large ripe bananas mashed
  • 1/2 cup almond butter or peanut butter
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon optional
  • 1/3 –1/2 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Mash the bananas in a large mixing bowl.
  4. Add almond butter, maple syrup, and vanilla; mix well.
  5. Add rolled oats and baking powder; stir to combine.
  6. Fold in chocolate chips and cinnamon if using.
  7. Let the mixture rest for a few minutes so the oats soften.
  8. Scoop spoonfuls of dough onto the baking sheet.
  9. Flatten slightly with your fingers or the back of a spoon.
  10. Bake for 10–12 minutes, or until edges are lightly golden.
  11. Cool on the baking sheet for 5 minutes, then transfer to a rack.
