Method
- Preheat oven to 300°F (150°C) and line a tray with parchment paper
- Blend cottage cheese until smooth and creamy
- Beat egg whites with cream of tartar until stiff peaks form
- In another bowl, mix egg yolks, cottage cheese, cornstarch, and sweetener
- Gently fold egg whites into yolk mixture to keep it airy
- Fold in blueberries carefully
- Spoon mixture into small rounds on baking tray
- Bake for 25–30 minutes until golden on top
- Let cool slightly before serving
