Ingredients
  

  • 3 large eggs separated
  • ½ cup cottage cheese well-drained & blended smooth
  • 1 tablespoon cornstarch
  • ¼ teaspoon cream of tartar
  • 1 tablespoon powdered sweetener optional
  • ½ cup fresh blueberries

Method
 

  1. Preheat oven to 300°F (150°C) and line a tray with parchment paper
  2. Blend cottage cheese until smooth and creamy
  3. Beat egg whites with cream of tartar until stiff peaks form
  4. In another bowl, mix egg yolks, cottage cheese, cornstarch, and sweetener
  5. Gently fold egg whites into yolk mixture to keep it airy
  6. Fold in blueberries carefully
  7. Spoon mixture into small rounds on baking tray
  8. Bake for 25–30 minutes until golden on top
  9. Let cool slightly before serving
