Preheat your oven to 375°F (190°C).
In a skillet over medium heat, sauté the diced onion and minced garlic in olive oil until soft and fragrant. Remove from heat and let cool slightly.
In a large mixing bowl, combine ground beef, ground pork, cooked onions and garlic, breadcrumbs, grated Parmesan, parsley, oregano, basil, salt, pepper, and eggs.
Mix gently with your hands until well combined — avoid overmixing to keep the meatloaf tender.
Shape the mixture into a loaf and place it in a baking dish or loaf pan.
In a separate bowl, whisk together crushed tomatoes, tomato paste, minced garlic, olive oil, Italian herbs, salt, and pepper to make the sauce. Spread half of the sauce over the top of the meatloaf.
Bake in the preheated oven for 45–55 minutes.
Remove from oven, spoon remaining sauce over the meatloaf, and return to bake for an additional 10–15 minutes until cooked through and sauce is bubbling.
Let the meatloaf rest for 10 minutes before slicing and serving.
