BBQ Chicken Stuffed Sweet Potatoes

Ingredients
  

  • Sweet potatoes – 4 medium
  • Cooked chicken shredded – about 2–3 cups
  • Barbecue sauce – ½ to 1 cup
  • Red onion diced – ½ cup
  • Olive oil – 1–2 tablespoons
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon
Optional toppings: chopped cilantro, sliced green onions, diced avocado, shredded cheese

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them several times with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for about 45–60 minutes, until tender when pierced with a knife.
  4. Meanwhile, in a large bowl, combine the shredded chicken with barbecue sauce and diced red onion. Stir until well coated.
  5. Once the sweet potatoes are done, slice each one open lengthwise.
  6. Use a fork to slightly fluff and loosen the sweet potato flesh.
  7. Spoon the barbecue chicken mixture into each sweet potato, dividing evenly.
  8. Add any optional toppings you like.
  9. Serve warm.
