Preheat your oven to 400°F (200°C) or heat a grill pan over medium-high heat.
Place bread slices on a baking sheet and brush lightly with olive oil. Toast in the oven or on the grill until golden and crisp on both sides.
While the bread is toasting, combine diced tomatoes, chopped basil, olive oil, salt, and pepper in a mixing bowl. Stir gently to combine.
Once the bread is toasted, rub one side of each warm slice with a garlic clove to infuse the toast with garlic flavor.
Spoon the tomato mixture over each slice. Drizzle with a little more olive oil and, if using, a touch of balsamic vinegar.
Serve immediately while the bread is still crisp and the tomato juices are fresh.
