Ingredients
  

  • 2 large chicken breasts cut into bite-sized pieces
  • 1 cup almond flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil or avocado oil
  • Optional: chopped parsley for garnish

Method
 

  1. Preheat oven to 400°F (200°C) or prepare an air fryer
  2. Cut chicken breasts into small nugget-sized pieces
  3. In a bowl whisk the eggs until smooth
  4. In another bowl combine almond flour, garlic powder, onion powder, paprika, salt, and black pepper
  5. Dip each chicken piece into the egg mixture
  6. Coat the chicken thoroughly in the almond flour mixture
  7. Place nuggets on a lined baking sheet
  8. Lightly brush or spray with olive oil
  9. Bake until golden and cooked through
  10. Flip halfway through baking for even crispiness
  11. Serve warm with your favorite dipping sauce
