Ingredients
  

  • Chicken thighs or breast – 500 g 1 lb, cut into bite-sized pieces for even cooking
  • Butter – 3 tablespoons 45 g, for rich flavor and sautéing
  • Heavy cream – 1 cup 240 ml, creates the creamy sauce base
  • Tomato paste – 2 tablespoons 30 g, adds depth and color
  • Garlic – 3 cloves minced for aromatic flavor

Method
 

  1. Heat butter in a large skillet over medium heat until melted and slightly bubbling
  2. Add minced garlic and sauté for about 30 seconds until fragrant
  3. Add chicken pieces and cook until lightly browned on all sides
  4. Stir in tomato paste and mix well to coat the chicken evenly
  5. Pour in heavy cream and stir to combine into a smooth sauce
  6. Reduce heat to low and let the curry simmer gently for 10–15 minutes
  7. Stir occasionally until the sauce thickens and chicken is fully cooked
  8. Taste and adjust salt if needed
  9. Remove from heat and let rest for a few minutes before serving
