Ingredients
  

  • cups blanched almond flour finely ground for best texture
  • 2 cups shredded mozzarella cheese low-moisture preferred
  • 2 oz cream cheese softened
  • 2 large eggs room temperature
  • 1 teaspoon baking powder optional, for extra fluffiness

Method
 

  1. Preheat oven to 350°F (180°C) and line a baking tray with parchment paper
  2. Add shredded mozzarella and cream cheese into a microwave-safe bowl
  3. Heat in short intervals until melted and smooth
  4. Stir the mixture until fully combined and slightly cooled
  5. Add almond flour and eggs into the melted cheese mixture
  6. Mix thoroughly until a dough forms
  7. Knead gently until smooth and elastic
  8. Divide dough into equal portions and shape into round buns
  9. Place buns on prepared baking tray with space between each
  10. Optionally brush tops with beaten egg for a golden finish
  11. Bake until buns are golden brown and firm on the outside
  12. Remove and let cool slightly before serving
