Ingredients
  

  • 1 cup all-purpose flour or whole wheat or gluten-free mix
  • 2 teaspoons baking powder
  • Pinch of salt optional
  • 1 cup + 2 tablespoons cottage cheese 2% or 4%
  • 1 large egg optional, for brushing
  • Optional toppings: everything bagel seasoning sesame seeds, poppy seeds

Method
 

  1. Combine flour, baking powder, and a pinch of salt in a large bowl
  2. Add cottage cheese and stir until dough begins to form
  3. Turn dough onto a floured surface and knead 1–2 minutes until semi-smooth
  4. Divide dough into 4 equal pieces
  5. Roll each into a 6–7 inch log and join ends to form a bagel
  6. Whisk egg with a splash of water and brush egg wash over bagels (optional)
  7. Preheat air fryer to about 300°F
  8. Place bagels in basket in a single layer (work in batches if needed)
  9. Cook for about 15–17 minutes until golden and cooked through
  10. Remove and let cool at least 15 minutes before slicing
