Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper
Unfold the thawed puff pastry on a clean surface and gently smooth out any folds
Cut the pastry into small squares, about 2 inches each
Place the pastry squares onto the baking sheet, leaving space between them
Add one cube of brie cheese to the center of each square
Spoon a small amount of peach preserves on top of each brie cube
Lightly press the filling into the pastry without tearing it
Optionally pinch corners slightly toward the center for a rustic shape
Bake for 12–15 minutes until golden brown and puffed
Remove from oven and allow to cool for a few minutes before serving
