Preheat the oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Cut the avocado in half and remove the pit.
Scoop the avocado flesh into a mixing bowl.
Add the egg to the bowl.
Add the shredded mozzarella cheese.
Mash and mix the ingredients until fully combined.
Divide the mixture into 3–4 portions.
Place portions onto the parchment-lined baking sheet.
Use a spoon to flatten them into small round bread shapes.
Sprinkle optional seasonings if desired.
Bake for about 18–20 minutes until golden around the edges.
Remove from the oven and allow to cool slightly before serving.
